Oh my gosh. Have you ever found a recipe that you become addicted with? This is mine. I've made T and I this the last 5 days out of 6. He has no choice and I'm not apologising for it! Hello sweet potato. The motherload when it comes to help regulate your blood sugar level.
What I tend to do is steam/boil 3 sweet potatoes at a time in quarters and keep the skins on. Then keep them in the fridge and use half a sweet potato per morning for two people. EASY!
half a sweet potato - steamed
half a mango, chopped, skin off
half an apple, chopped, skin on
half a pear, chopped, skin on
just under a cup of cocnut milk
1/2 tsp all spice
In a pan put all the ingredients in and bring to the boil. Pop into the nutribullet and whizz up till smooth. Top with coconut flakes, chia seeds, flax seeds, corn flowers, beet powder/green powder, cacao nibs, anything you want really.
