Teff cookies

Another cookie, I know but I'm currently really craving crispy, chewy, chunky biscuits. These are pretty good, ie they went within an hour of coming out of the oven.

Teff is a rich, deep and flavoursome flour that is gluten free. It's also pretty high in calcium and amino acids meaning for us lactose intolerant odd bods it's happy days. This recipe is one of the easiest I've created and I would encourage you to try it both with tahini (most people love this but it's my least favourite) and with peanut butter. If you can eat nuts and prefer almond or cashew butter, I would absolutely substitute it, same quantities.


60 grams Tahini/peanut butter/nut butter

1tbsp honey/maple syrup

180g teff flour

2tsp baking powder

1tsp chia seeds

Mix everything together and roll into golf balls, squish down with a fork and cook for 15mins at 180C.

*feel free to leave out the chia seeds. Make sure your nut butter is mixed well and if it's too dry add a little coconut oil. You want it to be a running consistency.
