'tis blackberry season

walking down the lanes thick of blackberries and the crips air on our backs i couldn't wait to get home and bake. to sit by the fire with the smells of pastry cooking in our nostrils. it is the simplest of recipes and takes no time at all. maybe 20 minutes of prep and 15 minutes of cooking. simple. easy and delightful.



200g Gluten free flour

100g cold cubed butter

50ml water { maybe}

rub butter into flour with fingertips until incorporated, add water bit by bit and cut with a knife until dough comes together. wrap and refrigerate.

meanwhile mix blackberries with goats cheese and fresh thyme. mash a little to get the juices flowing. roll out pastry and cut into even number of circles {roughly makes 15 pies depending on how big!} pop a heaped teaspoon of mixture into the centre of a circle and cover with another circle, using a fork mash the edges together and brush with beaten egg. cook for 15 minutes on 180C.

eat hot or cold
