I'm back, like a bat out of hell. And it has been hell, coming back to Dublin after a week in the sun. Lots has happened in that week, I realised that I'm not made for Ireland any more. It's too expensive, too depressing and too, not quite right. Lots of our friends are moving away to a better life and I really don't blame them. We're planning the same, a move to somewhere where we really can say 'oh isn't the weather nice' and mean it rather than 'oh, at least it's not raining' like that's something to be extremely proud of. Crete was 32/26degrees and while it's not for everyone, it is for me. It soothes my soul like watching ink in water....I morph into the person I'm supposed to be. This body was not made for winter. This belly that's getting bigger with every week wasn't made to be hidden by 5 layers (it's not even considered Winter yet and that's where I am) but we have to be patient.
I don't mean to rant, I just need to get the words out of my head, I've been in a funk since we came back exactly 4 days 7hrs and 10 minutes ago. A funk that when I was single would see me buy a plane ticket immediately and move. But I came across these figs and here I am, in the kitchen smelling this simple as fig tart I made cook. The gluten free pastry being its crumbly usual self - some sort of metaphor for my grump that I'm in, the figs pulling me out of my cold depths as they melt with the maple syrup and ricotta and thyme smell that transports me back to Crete.

Figs - as many as fit on your pastry, I could do 5 cut into 1/8ths
ricotta - about half a tub, but again - whatever fits onto your pastry
a few sprigs of thyme
a handful of walnuts crushed
Cook in a preheated 180C oven for 20 mins-ish.
* Figs are a super duper food for us pregnant women, not only are they high in a number of vitamins and minerals (fibre, Vitamin B6, Potassium, Copper, Manganese etc) but it also has great properties when it comes to helping our digestive system and lowering blood pressure.....all of the things that may (or may not) be new to us during our pregnancy.
