Do you ever have that moment when you're like 'I just want to eat something RIGHT NOW' but yet nothing is cooked, made or even the shop at the end of the road that has gluten free biscuits seems too far away? Well, these little wonders are those saviours. Oh my gosh. They are really, really easy (perfect for kids to make too) and so quick. Before I left for my detox (more on that later) I made 3 batches in 3 days, the first without chocolate and then I just couldn't resist.....
150g Gluten free oat flour (I wiz oats in my nutribullet)
2 ripe banans
1tbsp honey/agave/brown rice syrup
50g dark chocolate chopped up into smallish bits
2tbsp desiccated coconut
2tbsp flax seeds (use chia if you don't have any)
2tbsp melted coconut oil
Mix and mash everything together and then make cookies roughly half the size of your palm. Cook at 180C for about 20mins or until they get a bit golden. Try not to eat them all at once!
