Mussels for every meal
Over the last 2 weeks our house has seen a mass of delicious recipes unfolding from duck, to oysters, to shoulders of Kerry lamb. There was the Dingle Dinner Cookbook that I was the food stylist on with Jo Murphy as the photographer and Niamh in the kitchen as home ec. And now there's this fantastic campaign I'm working on with Bord Bia. I love that I've been asked to work on projects like this one. 1st I love getting to create my own recipes for campaigns, 2nd Tom and I get to eat mussels (hells yeah!) and 3rd I get a kick out of showing people the versatility most food has. So here is my recipe for spicy coconut and fennel mussels.
1kilo of mussels, cleaned and brushed
2 shallots, diced
3 garlic cloves, peeled and sliced
1 tbsp of red curry paste
1 can of coconut milk - full fat
fennel - finely sliced
good bunch of coriander, chopped
In a pan, fry off the garlic and onion in a little coconut oil. Once soft add in the curry paste and cook for 2 minutes and then add in all the solid from the coconut milk plus half the liquid. Cook till bubbling then add in the mussels. Cook for 5 minutes making sure to baste the mussels all the time. Finely slice some fennel or use a mandolin and sprinkle over the top with some freshly chopped coriander.
This recipe literally takes under 15minutes to make. Tom, who by his own admission is not a cook, made it while I was talking him through it. In his own words 'um, I thought mussels were quite a tricky thing to cook, didn't realise they take so little time' ....From the mouths of a babe - so for those that can't cook, I'd really like to see you try this recipe!
Did you know that mussels contain a huge amount of nutrients - iron, zinc and omega 3 to name just a few! And at roughly €4-5 a kilo, it couldn't be a better deal for supper on a cold winters evening.
